We bake with Marrows, a very light variety of zucchini. Got lots of friends and family who don't like vegetables in any form. The lowfat recipe uses applesauce in place of some of the oil. Course, I like a dollop of (I Can't Believe It's Not) butter on it.

Oh that sounds good! Can I have some? Did you grow the zucchini? My grandmother would make zucchini cake fresh from the garden. Yummy.
